Arriba Naciónal is the name of the cocoa grown on the plantation outside the town of Patricia Pilar in the province of Los Ríos, Ecuador. Arriba Naciónal is the most common cocoa in Ecuador and is usually considered the pride of the country. Arriba Naciónal is well known for its fruity aromas with pleasantly balanced acidity and hints of tropical fruits. The plantation in Ecuador currently covers 30 hectares with around 35,000 cocoa trees. All are older varieties of Arriba Nacional. After harvesting the cacao fruit, the pulp is removed and the seeds, the future cacao beans, are processed. Fermentation and drying then take place. The cocoa that will go on to Wermlands Choklad to become raw chocolate is then pressed into blocks, while that used for Wermlands classic varieties is roasted and then ground into cocoa mass. The blocks and cocoa mass are carefully packed in cartons on pallets and collected by truck directly at the production site. They are driven to the port of Guayaquil, where the cocoa is loaded into a container that arrives at the port of Gothenburg after six or seven weeks. Wermlands Choklad has no unnecessary ingredients in its chocolate, but likes the shortest possible ingredient lists and thinks that a good chocolate should contain no more than the best cocoa beans, a well-chosen quality sugar and maybe some delicious flavoring. With a completely self-designed chocolate mold and packaging, you not only get a good chocolate bar, but also a stylish chocolate bar. Perfect to cozy up with yourself or to give as a gift.
