The tree is 3-4 meters high with thorny branches. It takes up to a year for the tree's fruit to ripen. This fruit is yellow and hard, and consists of three seeds at most, which carry the oil. It takes 100 kg of fruit to produce two to three liters of oil, so it has a high price. The fruit is picked by hand and dried in the sun. The flesh is then removed and the seeds can be separated. The oil is still produced in this traditional way: the seeds are roasted, crushed and ground into flour between stone mills. The flour is mixed with water to form a paste.
